BOSH! Red Pepper Couscous Salad

Fancy treating yourself to something a little special this bank holiday weekend? Well we have a super tasty BOSH! menu lined up for you, perfect for enjoying al fresco (if the sunshine turns up!) or treating your family at home… First up is this delicious Red Pepper Couscous Salad!

Serves 4

3 red peppers

1 tbsp olive oil

200g couscous

big pinch of saffron or 1 tsp ground turmeric

2 tsp paprika 

1 x 400g tin chickpeas

200g cherry tomatoes

70g rocket

130g black olives

75g smoked almonds

large bunch of flat-leaf parsley

salt and black pepper

For the dressing

4 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp sugar

1 lemon

salt and black pepper

Preheat grill to high • Line a baking tray • Kettle boiled

Start with the peppers

Trim the peppers and slice into 2–3cm chunks • Tip onto the lined baking tray • Drizzle with the olive oil and season with salt and pepper • Place under the hot grill for 10 minutes

Start the couscous

Put the couscous, saffron or turmeric and paprika into a bowl • Stir to combine • Pour in enough boiling water to just cover the couscous • Cover and leave for 10 minutes 

Make the dressing

Add the oil, vinegar and sugar to a bowl and whisk to combine • Cut the lemon in half and squeeze in the juice of one half • Season with salt and pepper and whisk

Build the salad

Drain and rinse the chickpeas and add them to the mixing bowl • Halve the cherry tomatoes and add them to the bowl along with the rocket and black olives • Roughly chop the smoked almonds and add most of them to the bowl, reserving a few for garnish • Roughly chop the parsley and add it to the bowl

Finish the salad

Use a fork to fluff up the couscous • Squeeze over the juice from the remaining lemon half • Season to taste with salt and pepper • Remove the peppers from the grill • Tip the couscous and red peppers into the mixing bowl with the salad and toss everything together well

Serve

Tip the salad onto a serving platter and top with the reserved smoked almonds
